Pimientos de Padrón (fried Padron peppers) are a hugely popular tapas dish which originates from Galicia and is served in most tapas bars and restaurants in Lanzarote.  This is a great vegetarian tapas dish and the majority of the Padron peppers that you will be served are sweet and with lots of flavour, but every so often you will come across a very hot and spicy one.

This recipe serves 4:-

250g Padron peppers

Extra virgin olive oil

Course salt

French stick to serve

 

1: Wash the peppers and pat dry with kitchen towel

2: Pour the oil in a pan to a depth of 1 inch and put it on a medium heat

3: Throw in the peppers when the oil is hot and use a lid, heat the peppers for a total of 2 to 3 minutes (the peppers should brown on both sides)

4: Remove from the heat with a slotted spoon and sprinkle with the salt

5: Serve immediately while hot with warm crusty bread
